Today we're making Moroccan Harira, one of the most popular soups in the whole of the Middle East. This soup contains a combination of Chickpeas, Lentils, Meat and Vegetables that makes it a complete rounded meal. It's spiced with cinnamon and ginger to give it a classic winter spiced flavor. Substitute with other vegetables if making this vegetarian 200g (7oz) Finely diced tomatoes. I recommend canned 75g (2 3/4 oz) Green Lentils 75g (2 3/4 oz) Dried chickpeas 75g (2 3/4 oz) Vermicelli Noodles (Wheat not rice) 70g (2 1/2 oz) Tomato Paste 25g (3 Tbsp) All Purpose Flour 1 Medium Brown (Spanish) onion 2 Small pieces cinnamon bark or 1/2 Tsp Ground Cinnamon 1/4 Cup Minced Celery leaves 1/4 Cup Minced Parsley 1/4 Cup Minced Coriander 1 Tbsp Butter 2 Tsp Salt 3/4 Tsp Ginger Powder 1/2 Tsp Black Pepper Directions: 1. Soak your chickpeas overnight in water until they have at least doubled in size 2. Mince your celery, parsley and coriander finely 3. Dice your onion to a medium dice 4. Dice your meat into very small cubes 5. Wash your lentils 6. Place a pot on the stove over high heat and add the butter 7. Once the butter is melted, add the meat and sear stirring occasionally until a deep brown colour and a browned fond has formed on the base of the pot 8. Turn the heat down to medium and add the onion saute with the meat until it is translucent 9. Add some water to the pot to deglaze the fond 10. Once the pot is mostly cleaned, add the tomatoes, lentils, chickpeas, celery, cinnamon, ginger, black pepper, salt and 1.5 litres or quarts of water 11. Bring the pot to a boil and once it boils reduce the heat to medium and cover the pot. Allow to simmer for 45 minutes. 12. Check the chickpeas, lentils and meat for doneness. When cooked mix in the tomato paste 13. Make a slurry with the flour and 1/2c of water and stir into the pot, allow it to cook for 2 minutes 14. Add the vermicelli as well as parsley and coriander and allow the vermicelli to cook for 10 minutes, stirring regularly to prevent burning 15. Check vermicelli for doneness and then serve the soup with fresh lemon wedges

🤍kokenmetmo.nl 🤍facebook.com/kokenmetmo Ingredienten: 2 liter water 2 eetlepels boter 3 theelepels zout 1 theelepel peper 1 theelepel gemberpoeder 1 ui fijn gesneden En een beetje bloem om te binden je kunt ook allesbinder gebruiken 200 gram kikkererwten op water Je kunt ook droge kikkerweten een nacht laten weken in water 1 selderijstengel in kleine stukjes gesneden 2 eetlepels tomatenpasta 150 gram vermicelli 150 gram linzen op water. Je kunt ook droge linzen anderhalf uur laten weken in water Een half bosje koriander fijngehakt Een half bosje peterselie fijngehakt 2 grote tomaten gepureerd in een blender Stap 1: Doe de boter, de ui, de selderij, de linzen, de koriander, de peterselie, de tomatenpuree en het zout, peper, gemberpoeder in een pan met 2 liter water. Laat dat voor ongeveer 45 minuten koken met het deksel op de pan. Af en toe even roeren. (Als je er blokjes vlees aan wilt toevoegen is dit het moment dat te doen) Stap 2: Na 45 minuten voeg je de tomatenpasta toe. Daarna meteen de kikkererwten. Stap 3: Bind de soep met een beetje bloem of allesbinder Stap 4: Voeg de vermicelli er aan toe. Roer het en laat het nog 10 minuten koken. Dan is de soep klaar om gegeten te worden. Eet smakelijk!

Ingredients: 6 tomatoes 1 ½ tbsp cooking oil 320 gm boneless red meat 1 ½ cup chopped onion 1 tsp salt 1 celery stalk ½ tsp turmeric 1 ¼ tsp pepper 1 tsp ginger ½ tsp red chili 1 cinnamon ¼ tsp saffron 1 chickpea can ½ cup soaked lentils ¾ cup fresh coriander ½ cup vermicelli 6 cups hot water 1 tsp salt ½ cup water 4 tbsp ap flour ¼ cup fresh coriander Instructions: 1. Boil tomatoes in water for 5 minutes 2. Transfer the tomatoes to a bowl with ice water 3. Remove the skin off the tomatoes 4. Drizzle cooking oil in a large pot 5. Add red meat pieces along with chopped onion 6. Add salt to taste 7. Add chopped celeries, turmeric, pepper, ginger, and red chili 8. Sauté for 2 to 3 minutes 9. Add cinnamon, saffron, and crushed tomatoes 10. Add boiled chickpeas and soaked lentils 11. Cover with lid and cook for 20 minutes on low heat 12. Stir occasionally 13. Uncover and add chopped fresh coriander, and vermicelli 14. Pour in hot water 15. Add salt to taste 16. Cover with lid and cook for another 20 minutes on low heat 17. Mix flour with water to create flour slurry then pour it into the pot 18. Cover with lid and cook for 3 minutes on low heat 19. Uncover and finish off with fresh coriander 20. Ready to enjoy! Bonjour à tous, Je suis heureuse de vous retrouver avec cette nouvelle recette de soupe marocaine. Une soupe très facile à réaliser contrairement aux apparences ! Liste des ingrédients pour 10/12 personnes: 350g de boeuf coupé en dé 2 oignons moyens hachés 200g de pois chiche trempés 12h ou pois chiches en boîte que vous mettrez à la fin. 80g de lentilles trempés environ 1h 80 de vert de céleri branche 70g de cheveux d'ange vermicelle 1 bouquet de persil plat 1/2 bouquet de coriandre 1 càs de sel 1/2 càc de poivre 1càc bombée de gingembre 2 càc bombée de paprika 1/4 de cube de smen ou beurre rance (facultatif) pistils de safran eau 3 tomates mûres 2 càs de concentré de tomate 4 càs de farine 250ml d'eau Merci d'avoir regardé cette vidéo !!

Harira is a traditional Moroccan soup of tomato, lentils, and chickpeas. Wonderfully fragrant with zesty seasoning, it often ranks high on lists of must-try Moroccan foods. It’s a popular offering in Moroccan homes and restaurants, and you can even find it sold as street food. The name harira, derived from the Arabic word for silk, makes reference to the texture of the soup after it’s been thickened with either eggs or a tedouira of flour and water. The tedouira (thickener) sometimes includes yeast and may be left to ferment for a day or two. Although harira is prepared year-round, it’s famously associated with Ramadan when it’s likely to be served alongside Chebakia and other traditional foods to break the fast. This tradition is so ingrained that many Moroccans consider a meal during Ramadan incomplete if harira isn’t on the table.

It’s a delicious mix of spices and fresh herbs, with vegetables (mainly tomato). You can cook it with or without meat but if you can, use bones and your Harira will be at whole other level !!! HARIRA EXPRESS PRÊTE EN 20 MINUTES ⏱🥣 Hello mes foodies Aujourd’hui, je reviens avec un nouveau réel : la harira express, prête en 20 minutes top chrono ! Qui dit mieux ? Qu’est ce qu’on a le temps de faire en 20 minutes ? Une douche express ? Une petite salade ? Un rangement rapide ? Durant ce laps de temps je vous propose de réaliser une bonne harira, ce qui vous laissera le temps de préparer pleins d’autres accompagnements lorsque vous êtes pressés, ou bien si vous recevez des invités de dernières minutes. Pour cette recette il vous faudra : - 4 tomates bien mûres mixées - 4 cuillères à soupe d’huile d’olive - 50 gr de pois chiches (trempés la veille) - 50gr de lentilles blondes - 40gr de céleri haché, persil haché et coriandre hachée - 1 cuillère à café de poivre, ras el hanout, curcuma, gingembre, piment doux - 1 cuillère à soupe et demi de sel - 1 gros oignon haché - 2 litres d’eau bouillante - 1 cuillère à soupe de concentré de tomate - 50gr de farine fluide - 300ml d’eau - 100gr de vermicelle La cuisson se fera en 20 minutes sous pression, top chrono. Ajoutez ensuite votre préparation eau / farine et concentré de tomates, puis votre vermicelle. Mélangez bien pendant environ 5 minutes jusqu’a que votre vermicelle soit cuit.
