I was excited to visit, and before we toured the ancient ruins of Baalbek, we went on a street food tour. The first place Kamel and Fadi took me was a small butcher shop that specialized in not only raw fresh meat, but kebabs and kofta kebabs, and preparing meat to go into a special pastry from Baalbek. After eating the amazing pastries - which unfortunately didn’t make today - we then had some of the best freshly grilled kofta kebabs I’ve ever had. And so in this video we’ll learn to make Lebanese street food kofta kebabs! First let me mention to you this was my first time to ever make this kofta kebab recipe, and more importantly my first time to form kebabs on skewers. Let me tell you, they make it look much easier than it is. To form minced meat onto a metal sword like skewer can take a lifetime of practice and it’s challenging to get the perfect consistency, evenness, and form. But luckily it turned out pretty well. Ok, here are all the ingredients you’ll need to make this Lebanese street food kofta recipe. And this list of ingredients is just a guide, not exact. You can increase or decrease depending on your taste and feel. For the kofta kebabs: 1 White onion 100 g. Flat leaf parsley 1 kg. Ground lamb (or beef) ½ teaspoon Lebanese Seven Spice mixture 1 teaspoon Black pepper Salt - to taste Dry chili (I used cayenne) - to taste For the parsley salad: 100 g. Mix thoroughly until well coated 6- Marinade for a minimum of 10 minutes, but at least 1h is recommended (for extra flavour) and up to 24h in the fridge Turkish Marinade: 1- Blend your onion into a fine paste, then squeeze the liquid out of it 2- Add the onion juice, yoghurt, spices, pepper and tomato paste, garlic and oil to a bowl then mix thoroughly 3- Add the chicken to the bowl, and mix thoroughly 4- Marinade for a minimum of 10 minutes, but at least 1h is recommended (for extra flavour) and up to 24h in the fridge To grill on skewers: 1- Remove excess marinade, then thread the meat onto skewers, folding it if necessary so it isn't dangling far from the skewer 2- Add enough pieces for a portion, and take care not to compress them 3- Suspend over a baking dish or oven tray, and place into your oven under the grill/broiler set to high 4- Cook for about 10-12 minutes until the first side is browned, rotate and place back in the oven 5- Cook for about 2-4 more minutes until the second side is browned (if your chicken is extra thick, you may need to cook this further) To grill on a wire rack: 1- Place a wire rack over an oven tray and brush with vegetable oil 2- Lay the chicken on the wire rack in a single layer 3- Place under your grill/broiler set to high and cook for 8-10 minutes until browned 4- Remove and flip the pieces, cook for another 2-4 minutes until completely browned (extra time may be needed for thicker chicken) To make the Saffron Rice: 1- Thoroughly wash your rice, then add to a pot with the Oil, fry for a few minutes 2- Add the salt and pour enough water to cover the rice by about 1 cm 3- Bring to a boil, and allow to boil with the lid on for 3-5 minutes, until the water dissappears 4- Turn the heat to low and steam for 20m. When the time is up, fluff with a fork 5- Grind your saffron as mentioned above, then add a cup of cooked rice to it. Mix until Golden 6- Mix saffron rice in, or serve ontop of white rice Yogurt Sauce: 1- Microwave the garlic for 15-20 seconds 2- Add to a bowl with remaining ingredients and mix

Chicken Tikka Kebab | Chicken Tikka Recipe | Tandoori Chicken Tikka Kebab | Chicken Kebab | Chicken Tikka Kabab | How to Make Chicken Tikka | Murgh Tikka Kebab | Chicken Tikka Restaurant Style Ingredients for Chicken Tikka Kebab: (Tsp - teaspoon; Tbsp - tablespoon) - Boneless Chicken - 500 gms (cut into 2” tikka pieces) 1st Marinade: - Salt- 1 tsp - Lemon Juice-2 tsp - Ginger Garlic Paste- 1 tbsp 2nd Marinade: - Hung Curd- 5 tbsp - Turmeric Powder- a pinch (1/8 tsp) - Kashmiri Chilli Powder- 5 tsp - Cumin Powder- 1/2 tsp - Garam Masala Powder- 1/2 tsp - Mace Powder(Javitri Powder)- 1/2 tsp - Kasuri Methi(Fenugreek Leaves), dry roasted & powdered- 1/2 tsp - Salt- a pinch (1/8 tsp) - Red Food colour- a pinch - Cooking Oil- 2.5 tbsp Other Ingredients: - Butter, for basting(melted) - 2-3 tbsp Preparation: - To prepare the hung curd, strain the water from the curd or plain yogurt using a strainer or cloth to have a thick curd without any water. This may take 1.5 to 2 hrs, so plan accordingly. - You can use chicken tikka pieces or alternatively cut boneless chicken fillets into tikkas. - Wash and pat dry the boneless chicken fillets. Cut into 2” tikka shapes. - For the 1st marinade, add all the ingredients, mix well and set aside for 30 mins. - To prepare the 2nd marinade, add all the ingredients specified above in a bowl. - Whisk everything together and then add the marinated chicken pieces without the water that has released from the chicken . Mix everything well so that the chicken tikka pieces are well coated with the marinade. - Set aside to marinate for 3-4 hours in the refrigerator. Take out the marinated chicken from the refrigerator after 3 hrs & keep it in room temperature for 1 more hour before skewering & placing in the oven. Process: - Skewer the marinated chicken tikkas on a metal skewer 4 at a time. - Lay the skewers on a foil lined baking tray - Preheat the oven/OTG to 250 degrees C. - Slide in the tray in the top slot of the oven. - Roast for 10 mins at 250 degrees C. After 10 mins turn the chicken tikkas. - Roast for another 10 mins at 250 degrees C on the other side. - Remove and baste with melted butter. - Reduce the oven temperature to 200 degrees C. - Roast for 7-8 mins at 200 degrees C. Flip the chicken and continue basting with melted butter. - Finally roast for another 6-7 mins at 200 degrees. Add coriander leaves, mint leaves, processed cheese, cashewnut, almonds, degii red chili powder. Now, add coriander powder, coriander seeds, shahi jeera,crushed black cardamom, black peppercorns and mix well. Transfer it into a grinder jar and grind until smooth in texture. Now, add remaining mutton keema, hard boiled eggs and mix everything well. Now, place the smoked charcoal bowl in it and cover it for 4-5 minutes. Remove the charcoal and refrigerate the kheema until completely cool. For Smoke Take a piece of coal and heat it up on high flame. Once it gets hot enough, place it in a steel bowl along with cloves and add a few drops of ghee in it. For Seekh Kabab Masala In a shallow pan, add oil once it's hot, add cumin seeds and let it splutter well. Add onion, coarsely grind coriander seeds and saute it well until light golden in color. Add turmeric powder, coriander powder, asafoetida and saute for 10-15 seconds nicely. Now, add ginger garlic paste and saute, once ginger garlic paste cook well add degi red chili powder and saute for a while. Add tomato puree and let it cook for a while, add salt to taste and saute nicely. Add green chili, coriander leaves, mix well, add water and salt to taste. Once masala is cooked well, switch off the flame and keep it aside for further use. Add prepared seekh kebabs into masala, cover it with lid and toss well. Garnish with green chutney, onion rings, ginger julienne, lemon wedge and mint sprig. For Mutton Seekh Kebab Firstly, apply water on both palms, make medium potato size balls, take ice cream stick place into the middle of the prepared ball and press slowly slowly top to bottom of the ball and make seekh kebab. Keep in the fridge for a while. Take grilled pan or sizzler plate on high flame, add oil once oil gets hot, place prepared seekh kebabs and roast until nice golden brown in color and cooked well from both the sides. Once seekh kebabs cook well, switch off the flame and remove into plate. This amazingly easy to make kofta kebab recipe is jam-packed with middle eastern seasonings and spices and seared to perfection. Throughout the Middle East, just about every country and the region have their own version of Kofta with varying ingredients. It may be called kefta, kifta, kafta, koobideh, or a myriad of other names. While traditionally they are served more as meatballs, they are often spread out over a skewer and cooked over the open flame. Ingredients for this recipe: • 2 ½ pounds ground sirloin • ½ pound ground lamb • 1 peeled small diced yellow onion • 5 finely minced garlic cloves • 1/3 cup finely minced parsley • 2 tablespoons finely minced mint • 1 tablespoon sumac • 1 teaspoon allspice • 1 ½ teaspoons cinnamon • 1 teaspoon ground cardamom • 1 tablespoon cumin • 1 teaspoon paprika • 1 tablespoon sea salt • ½ teaspoon ground pepper Serves: 8 Prep Time: 15 minutes Cook Time: 10 minutes Marinate Time: 30 minutes Procedures: 1. Add all of the ingredients into a large bowl and thoroughly mix everything together until completely combined. 2. Place in the refrigerator covered for at least 30 minutes or up to overnight. 3. Remove the meat mixture and take out a large chunk and form it into a tight cylinder. 4. Skewer the meat cylinder and then press and pull it to fit a majority of the skewer. Repeat until all of the meat has been used. 5. Preheat your grill to 450° to 550° F or a griddle to medium-high heat. 6. Place the kofta kebabs right onto your grill or griddle and cook for 3-4 minutes or until very browned and cooked throughout. 7. Remove and serve. Chef Notes: Make-Ahead: This recipe is meant to be eaten as soon as it is done cooking, but you can keep it warm for about an hour at low temperatures in the oven (165° F) before serving. How to Store: Keep covered in the refrigerator for up to 4 days. This will freeze well covered for up to 3 months. Thaw for 1 day in the refrigerator before reheating. How to Reheat: Place directly on a hot grill (450° to 550° F) for 2 to 3 minutes per side or until hot. You can also place on a cookie sheet tray and bake in the oven at 350° for 6-8 minutes or until hot. Likewise, you can heat up in the microwave. If the meat starts to fall off the skewer when forming it to the skewer chill it in the refrigerator for 10 minutes to help it tighten up.
