This is a classic recipe for a loved-by-everyone Uzbek Plov, also called Pilaf. Plov is the most classic dish of Uzbekistan, consisting of rice, onion, carrots and meat, all cooked slowly in layers in a traditional cast-iron Kazan (essentially, a cauldron). If you don’t have a Kazan lying around, you can sub it for a cast-iron casserole dish. FASTER VERSION OF THIS SAME VIDEO: 🤍 In this video, I will show you how to make the greatest palov that will even wow Uzbeks! Let's get started... For making the authentic traditional Uzbek Plov, the ingredients you will need: 5-6 carrots 4 cups of round rice 1.5 cup of vegetable oil 1 big onion 2kg of meat (lamb/beef) 1 teaspoon of Zira (cumin), black pepper, and paprika 1.5 tablespoon of salt Clean and delicious water as needed 3 bulbs of garlic Optional: 2-3 hot peppers (put them same as garlic) Instructions for How to make Uzbek Plov: Heat the oil until its very hot (starts to smoke) Cut the meat into big pieces (about 3cm^3) Fry the meat until golden brown Chop onions and carrots as shown Once meat is ready, throw in the onions and fry until the onions are golden red Then add the carrots and fry until the carrots become loose and soft Add water until the meat is covered Place the garlic and hot peppers on top. Simmer for 10-15 minutes Wash the rice Take off the garlic and hot peppers Gently spread the rice on top of everything Add water so when you put the spatula at 30 degrees angle, the water reaches almost half of the spatula. Keep stirring the rice only Once the water has evaporated, form a dome and make a hole in the center. Place back the garlic and peppers on top of the rice. Seal tight and put fire in the slowest mode. Let stay for 40 minutes. Uncover, flip the top of the rice upside down. Cover for another 10 minutes and it will be ready! For the ingredients you need: 5-6 carrots 4 cups of round rice 1.5 cup of vegetable oil 1 big onion 2kg of meat (lamb/beef) 1 teaspoon of Zira (cumin), black pepper, and paprika 1.5 tablespoon of salt Clean and delicious water as needed 3 bulbs of garlic Optional: 2-3 hot peppers (put them same as garlic) Procedure: Heat the oil until it's very hot (starts to smoke) Cut the meat into big pieces (about 3cm^3) Fry the meat until golden brown Chop onions and carrots as shown Once meat is ready, throw in the onions and fry until the onions are golden red Then add the carrots and fry until the carrots become loose and soft Add water until the meat is covered Place the garlic and hot peppers on top. Simmer for 10-15 minutes Wash the rice Take off the garlics and hot peppers Gently spread the rice on top of everything Add water so when you put the spatula at 30 degrees angle, the water reaches almost half of the spatula. Keep stirring the rice only Once the water has evaporated, form a dome and make a hole in the center. Place back the garlics and peppers on top of the rice. Seal tight and put fire in the slowest mode. Let stay for 40 minutes. Uncover, flip the top of the rice upside down. Cover for another 10 minutes and it will be ready! STEPS OF THE RECIPE : STEP 1 : - Add sunflower oil in a large kazan over fire - Add 400g of lamb fat - When the pieces of fat turn golden, remove them from the heat and keep it aside - Add 500g lamb bones -When the pieces of lamb bones turn golden remove them from the heat and keep it aside -Add 1.2kg of lamb meat -When the pieces of lamb meat turn golden remove them from the heat and keep it aside -Add 800g of onions -Add 1kg of carrots - Add 500g of chickpeas - the chickpeas need to be soaked- -Add the lamb fat, the lamb bones and the lamb meat - Add 2 tbsp of powder cumin - Add 1/2 tbsp of salt - Add 1/2 tbsp of powder black pepper - Add 1 tbsp of cumin seeds - Add 1 tbsp of powder coriander - Add 3 liters of water COVER AND COOK IT FOR 30 TO 40 MINUTES STEP 2 : - Wash 3 times 1kg of round rice -Add 2 full garlics - -Optional- Add 1 to 3 spicy green piments COVER AND COOK IT FOR 10 MINUTES STEP 3 : - Add the rice to the kazan COVER AND COOK IT 30 MINUTES Follow the steps at the video. Uzbek Plov is nutritious, yummy, tasty and can be eaten at any time of the day. Enjoy my fast easy recipe. Ingredients 1/2 lbs lamb (or beef) 2 medium onions 5 medium carrots 3 cup long grain rice 3 bay leaves 1 bulb of garlic 1/2 cup olive oil salt to taste pepper to taste 2 tsp cumin (optional ) Preparation ✔️Prep the Meat and Veggies: Cut the meat into cubes, slice carrots, and dice onions. ✔️Brown the Meat: In a preheated sauce pan/ sufuria use a mwiko / spatula to brown the sides of the meat. ✔️Cook the Veggies: Add onions and carrots to the Dutch oven, sautéing until the onions turn translucent. ✔️Add Rice and Seasoning: Add long grain rice and bay leaves to the sauce pan, stirring until ingredients are evenly distributed, and toasting the rice slightly. ✔️Slice off the top of a head of garlic and place the entire head inside the Dutch oven. Add water and season generously with salt and pepper. ✔️Cook and Cover: Allow the plov to come to a simmer. Turn the heat down low, pop the lid on, and cook for an additional 30 minutes. 🍽️Serve: Serve warm alongside pickled veggies or salad. 💡 Cooking Tips ✔️Don’t skip browning the meat. Brown the meat until it has a golden brown color on all sides. This will not only enhance the texture of the plov, but it will also create a richer, meatier taste. ✔️Rinse the rice before cooking. Run the rice under cold water in a colander a few times to remove any excess starch. This will prevent the rice from turning mushy. ✔️Toast the rice slightly. Once you add the long grain rice to the pan, take a few minutes to toast it. This will bring out its fragrant flavors and also help it keep its texture as it cooks in the broth. ✔️Use a whole garlic head versus individual cloves. Cooking plov with an entire garlic head is not only traditional, it also yields the most flavor. It also makes for such a lovely presentation. ✔️Use a sharp knife to cut carrots. Carrots can be one of the tougher veggies to slice. Invest in a sharp knife to prevent slippage. 🍽️Serving Uzbek Plov Uzbek plov is perfect for lunch or dinner. It’s also a wonderful dish to make for your next dinner party, as it serves a lot of people, requires minimal clean-up, and is ultra filling. Keep it traditional by serving plov alongside vinegary pickles. It’s hard to explain how satisfying this combination is! The savoriness of the dish is also complimented nicely by a cabbage salad. 💡Storing Tip Leftover Plov Refrigerating: Refrigerate leftover plov by storing it in an airtight container in the fridge. Today we are making a famous Uyghur (Uighur) recipe called Polow. Also known as Pulao, Plov or Pilaf. Traditionally this dish is made with beef, however this version is vegan friendly, refined sugar free and gluten free. A great what I eat in a day one pot wonder recipe that is simple, easy and cheap to make. Enjoy a culturally rich dish that is delicious and cruelty free. Please read the full recipe below and see some resources on Uyghur people and how you can support them during this time. Thank you! - Ingredients - *Serves 4 – 5 people 1kg carrots 5 teaspoons of salt (I use iodised salt) 2 cups of Jasmine rice or medium grain white rice (we are using jasmine rice in this video) 1/2 cup of dried apricots (preferably organic with no sulphites) 2 – 3 tablespoons of dried cranberries 2 – 3 tablespoons of sultanas (also known as raisins) 1/2 - 1 cup of extra virgin olive oil 1 large ripe tomato 1 medium onion (you can use either brown or red onion. In this video we are using a red onion) 3/4 cup of hot water - Additional Items - A large stainless-steel wok with a lid A large mixing bowl A crosswire strainer (for the rice) A measuring cup A set of chopsticks A wooden spoon A sharp knife A vegetable chopper/dicer (optional, but recommended to save preparation time. I use the Alligator Stainless Steel Vegetable Chopper) - Recipe - 1. Wash Jasmine rice 3 times until the water is clear. Put rice aside in a large bowl soaking in clean water for at least 30 minutes. 2. Chop all the carrots at an angle into medium sized strips, or use a vegetable chopper. It’s important that the carrots are all roughly the same size so everything cooks evenly. 3. Chop the tomato and onion into small bite-sized pieces. Keep them in separate bowls. 4. Pour the olive oil into the stainless-steel wok and heat up for a few minutes on a medium-high heat. Add the onions to the wok and stir for a few minutes. 5. Once the onions are starting to go a golden brown, add the chopped tomato. Cook this until the tomato becomes saucy like a puree and there are not many solid pieces left. This may only take 5 – 7 minutes or so. 6. Add the carrots and give it a good stir. Then add 5 teaspoons of salt and stir again. Cook the carrots for about 10 minutes and you can see they have become softer and darker in colour. 7. Turn the stove down to a low heat. Add the hot water. The water should just be covering the carrot. If you can’t see the water, add a bit more. Do not mix! Let the water simmer and be on the same level as the carrots. Place the lid on the wok leaving a small gap for the steam to escape. Cook for about 5 – 10 minutes. 8. Taste test the carrot and add more salt if needed. Now add the rice on top. Try to keep the rice in one spot and build up into a pile rather than spreading it out. Do not mix the rice. Use chopsticks to poke hole into the mixture. This will let the steam from the water cook the rice and evaporate. Cover the wok again with a lid but leave a small gap. Cook this for 5 minutes. 9. Try to flip the top layer of rice over so it now makes contact with the carrots. Poke holes in the rice again using chopsticks. Add the dried apricots on top. Close the wok with a lid leaving an opening. Cook for another 5 minutes. 10. Mix everything completely. Use chopsticks to poke holes in rice again. Add the sultanas and dried cranberries on top, do not mix through. Place the lid on the wok again but now have it fully closed with no gap. Cook for 20 minutes on low heat. 11. Remove the wok lid and mix everything through. Taste test to check the rice is fully cooked. If the rice is still a bit crunchy, leave to cook for another 5 minutes with the lid fully closed. 12. Remove the burnt rice (Guōbā or tahdig) at the bottom of the wok by using a wooden flat spatula. 13.
